4 Fun Avocado Recipes in 30 Minutes or Less

Avocados should be on everyone’s grocery list. These creamy green veggies are packed full of fat — the good kind! — as well as vitamins and minerals.

Despite their nutritional benefits, some people — like myself — still just don’t “get” the avocado trend. Maybe it’s a texture thing, but I’m not quite ready to graduate into eating plain avocados by themselves.

Let me keep my guacamole. You can even sneak your avocado slices into my salads. But the thought of a whole avocado as a snack makes me feel a little…green. That is, until I came up with a few creative ways to spice them up.

All you need is a stovetop and a few ingredients to take your avocados from blah to delicious for a great pre- or post-workout snack.

Chicken and Broccoli Avocados

Ingredients

  • 1 avocado
  • 1/2 chicken breast
  • 1/4 head of broccoli
  • 2 tablespoons of cheddar cheese
  • 1/8 teaspoon of salt
  • 1/8 teaspoon of pepper
Directions

  1. In a pot, bring two cups of water to a boil. Place chicken breast and broccoli in the water and cover.
  2. Cook for ten to fifteen minutes or until the chicken breast is cooked all the way through.
  3. Drain the water
  4. Shred the chicken using a fork and knife.
  5. Cut your avocado in half and remove the center.
  6. Stuff each avocado half with chicken and broccoli and top with cheese, salt and pepper before serving.

Bacon, Egg and Cheese Avocados

Ingredients

  • 1 avocado
  • 2 pieces of bacon
  • 1 egg
  • 1 tablespoon of cheddar cheese
  • Salt and pepper to taste
Directions

  1. In a small skillet, place two pieces of bacon over medium heat.
  2. Flip the bacon every three minutes or so. Remove from heat and place on a paper towel.
  3. Using the same skillet, crack an egg. Reduce heat and cover the skillet for five minutes.
  4. Cut your avocado in half and remove the center.
  5. Cook the egg according to your yolk preferences before placing the egg in the center of one of your avocado halves.
  6. Place the bacon in the other half and grate cheese, salt and pepper over the top.

Spicy Shrimp Avocados

Ingredients

  • 1 avocado
  • 1 cup of shrimp
  • 1 teaspoon of cumin
  • 1 teaspoon of Old Bay seafood seasoning
  • 1 teaspoon of garlic powder
  • 1/2 lime
  • 2 tablespoons of Siracha sauce
  • Salt and pepper to taste
Directions

  1. Cut your avocado in half and remove the center.
  2. In a small nonstick skillet, cook your shrimp over medium heat. Add garlic powder and Old Bay seasoning before covering the skillet for five to eight minutes.
  3. Once your shrimp is cooked, add it to the center of the avocado and top with lime juice and Siracha sauce before enjoying!

Southwest Avocados

Ingredients

  • 1 avocado
  • 1/2 chicken breast
  • 1 teaspoon of cumin
  • 1/2 cup of corn
  • 1/2 cup of salsa
Directions

  1. Cut your avocado in half and remove the center.
  2. Bring one cup of water to a boil on the stovetop. Add your chicken breast and cover for five to ten minutes or until the chicken is cooked all the way through.
  3. Shred the chicken with a fork and knife before adding it to the center of the avocado.
  4. Top the chicken with cumin, salsa and corn before serving.
