Name: Bacon Cauliflower Soup
Directions: 1. Grab a microwave safe dish and cover it with paper towels. Use it to cook your bacon in the microwave three to four pieces at a time. 2. Meanwhile, in a large stock pot, melt your coconut oil. Add in your onions and garlic and stir until translucent. 3. Cut up your cauliflower head into small florets. Feel free to use the leaves as well — it won’t affect the flavor much and they’re just as healthy as the rest of it! 4. Add you cauliflower, chopped carrots and chopped celery to the stock pot, stirring frequently. Cook for five to ten minutes or until the vegetables are soft. 5. Add your water, chicken broth, coconut milk and seasonings to the mixture. 6. Pour the mixture into a blender and puree or use a hand-held mixer or blender to blend the soup while still in the crock pot. Blend it to your desired consistency — I left mine with a little bit of chunk, but you can make it silky smooth if you so prefer. 7.Take your bacon out of the refrigerator and use kitchen shears to cut it into small pieces before adding it to the soup. 8. Enjoy!
