Name: Chicken Fried Caulirice

Directions: Pre-prep - Finely chop all the vegetables - for the "caulirice" use a chopper, if you have one, to get it really fine, otherwise use a large chef knife - slice chicken breasts into bit sized pieces - sprinkle chicken with salt and garlic powder 1) Heat a large skillet over medium/high heat and add the 1 tablespoon of ghee 2) Pan saute the chicken for 8 to 10 minutes or until cooked through 3) Remove chicken from the pan, leaving any "juice" 4) Add onion to the pan and cook for 2 minutes 5) Add finely chopped cauliflower to the pan and cook for 8 to 10 minutes or until soft. 6) Return meat to the pan and add the tomatoes and cilantro. Warm through and serve hot! Make sure to salt to taste and enjoy!!
