Name: Paleo Chicken Salad
Directions: 1. First things first, you need to make Paleo mayo. Go ahead and put your chicken breasts on to boil while you're working on this. I advise making up a batch to keep in your kitchen at all times because it's so useful. Whether you're using it as a mayo substitute or as a salad dressing, it's so versatile and helpful. You can make Paleo mayo simply using a whisk, but to truly get a mayonnaise-like texture, you'll need an emulsion blender. Combine a room temperature egg, the juice from half of a lemon, a cup of olive oil, 1/4 teaspoon of dijon mustard and a teaspoon of vinegar in a container and then use your emulsion blender to whip up some mayo-like goodness. 2. Once you've completed that step, set one cup of the mayo to the side for this recipe and store the rest. Be sure to use it within three to four days. Take your (fully cooked) chicken breasts out and shred them. Add the chicken shredding to your food processor and pulse it several times depending on how smooth you like for your chicken salad to be. 3. Chop up your pecans, grapes, apples and celery. Mix them in a bowl with the mayo and shredded chicken.
