Name: Southwest Egg Scramble

Directions: 1) Finely chop onion and red bell pepper 2) Heat pan to medium/high heat and add ghee 3) Saute onion and pepper for five minutes until onion is translucent 4) Remove from pan 5) Beat 4 eggs in a bowl 6) Add one more tablespoon of ghee and pour eggs into pan 7) Scramble in pan at medium/high heat until they reach desired doneness 8) Mix eggs with vegetables 9) Sprinkle with finely chopped cilantro.
