Directions: 1. Preheat your oven to 350 degrees F. 2. In a skillet over medium heat, heat up your butter before adding garlic, tomatoes, black olives, basil, capers, mint and red pepper flakes. 3. Cook the sauce for three to five minutes. 4. Add your cod to a slightly greased oven-safe dish. Season with salt and pepper before adding the sauce on top. 5. Cover the oven-safe container with aluminum foil and bake in the oven for 15 to 20 minutes or until the fish is cooked all the way through.
