Name: Sweet and Sour Crunch Salad
Directions: 1. Preheat your oven to 300 degrees F. Chop up one bulb of fennel. 2. In the microwave, melt 1 tablespoon of coconut oil. Mix the oil with mustard powder and parsley once you pull it out of the microwave. 3. Place the chopped fennel on a baking sheet and brush the coconut oil mixture on top. Bake in the oven for 20 minutes. 4. Chop up a grapefruit. 5. Chop up your pecans. 6. Once the fennel bulb has finished cooking, combine the ingredients in a bowl and toss before serving.
