You can make Paleo mayo simply using a whisk, but to truly get a mayonnaise-like texture, you'll need an emulsion blender. Combine a room temperature egg, the juice from half of a lemon, a cup of olive oil, 1/4 teaspoon of dijon mustard and a teaspoon of vinegar in a container and then use your emulsion blender to whip up some mayo-like goodness. Use 1/2 cup of the Paleo mayo for this recipe and store the recipe.
